BURRITO (Boo-RREE-toh)
Rolled flour tortilla stuffed with beef, topped with onion sauce. |
CARNITAS (Kahr-NEE-tahs)
Chunks of cooked pork used in many diferent Mexican foods. |
CHALUPA (Cha-LOO-pah)
Flath corn tortilla with beans, sprinkled with cheese, topped with lettuce and guacamole. |
CHILE RELLENO (Chee-lay-re-yeh-no)
Poblano pepper stuffed with cheese, egg battered and pan fried . |
CHIPOTLE (Chih-POHT-lay)
Aztec word meaning smoke-cured chile, and vary from rather mild to el schorcho hot. The smokiness makes such peppers excellent in sauces.
Dried & smoked jalapeño peppers are currently most commonly used in this preparation. |

Spicy pork sausage used in a variety of items such as eggs, tamales or burritos. |
